A Year Of Eating Seasonally: Food Journal

This year, I set a goal to eat ONLY in season, locally grown produce. You can read more about that here. This post will list out in detail what we actually have eaten and include any recipes I used! Recipes are the ones hyperlinked over the text (the blue letters.) Just click the link and it will open a new window. Some of the things I cook are family recipes or my own creation. As I get my recipes up on the blog, I promise I will update with links.

As of September, I have stayed true to my mission of only in season produce, with the exception of if we eat out. I prefer not to eat out too often but there have been several occasions where we have gone out with family for birthdays or I have been away from the house all day and picked something up on the way home. Also my husband occasionally goes out of town for work and when he is gone I usually don’t cook a full meal.

Some people have asked what we have for lunch and its usually leftovers or some concoction made with leftovers. We also often make a sandwich or just eat finger foods. Breakfast is usually eggs, oatmeal or some sort of muffin or pancake. When possible we add fruits and veggies to these meals also, I just don’t record them.

And y’all, we eat A LOT of leftovers. Really, there is no better way to simplify your life than making a little extra with dinner and then having a few nights a week where you can just re-heat some leftovers and not go through the process of making an entirely new meal. Its the best! (Oh and we don’t have a microwave – we ditched that with our last move – so we use the toaster oven and these perfectly sized cookie sheets to re-heat our food.)

(My husband was out of town a good portion of October and November so I cooked less than usual and we ate a bunch of leftovers. For that reason, I combined October and November because they were so sparse on their own.)

  • Grilled chicken with Peach Salsa, Roasted Carrots and Sauteed Kale
  • Chicken Marsala on a bed of Spaghetti Squash
  • Cheeseburgers on fresh Sourdough buns with a Cucumber Salad
  • Spaghetti with homemade Meatsauce, Sauteed Zucchini
  • BBQ Chicken with Sauteed Okra and a fresh side salad
  • Habanero Chicken with Sauteed Okra and Steamed Rice
  • Crispy Oven Baked Chicken, Sauteed Zucchini, Homemade Macaroni ‘n Cheese
  • Chicken Fajitas with Spanish Rice and Refried Beans
  • Instant Pot Lemon Butter Chicken, Sauteed Okra, Roasted Potatoes
  • Crispy Oven Baked Chicken with Mashed Potatoes and a fresh side salad
  • Instant Pot Hawaiian Chicken with Pineapple and Bell Pepper on a bed of Steamed Rice
  • A One Skillet mix of rice, mushrooms, ground beef and some spices with a side of roasted Shishito Peppers

(Prior to August, the format was in a weekly form and listing what we ate every day. I found this to be cluttery with many repetitions of “leftovers” or when we occasionally eat out so I changed the format to a monthly form and only listing the actual meals I cooked. From here to the rest of the page you’ll see the weekly format.)

Week 7:

Day 43 – Leftovers
Day 44 – Roasted Chicken, sauteed oyster mushrooms, sauteed yellow squash and zucchini
Day 45 – Chicken fajitas, Spanish quinoa, refried beans, shishito peppers
Day 46 – Mushroom Burger, shishito peppers, homemade pickles
Day 47 – Chicken Marsala with mushrooms on a bed of Spaghetti Squash
Day 48 – Leftovers
Day 49 – Southwestern Spaghetti Squash

Week 6:

Day 36 – Pizza
Day 37 – Chicken Salsa Tacos, Spanish rice, refried beans
Day 38 – Leftovers
Day 39 – Oven Baked Chicken, cheesy macaroni, sauteed zucchini
Day 40 – Stuffed Bell Peppers, refried beans
Day 41 – Beef Kabobs with bell pepper, grilled eggplant, grilled pineapple
Day 42 – Leftovers

Week 5:

Day 29 – Italian Breaded Chicken, Sauteed Squash, “Smashed Potatoes
Day 30 – Chicken Salsa Tacos, Roasted Shishito Peppers, Refried Beans
Day 31 – Leftovers
Day 32 – Spaghetti Squash Spaghetti (Spaghetti squash, ground beef, fresh tomato sauce and cheese)
Day 33 – Stuffed Bell Peppers with ground beef, quinoa, cheese and tomatoes, Spanish rice, refried beans
Day 34 – Leftovers
Day 35 – Leftovers

Week 4:

Day 22 – Texas Caviar (spoiler: its not fish eggs) and organic corn chips
Day 23 – Grilled Chicken, Grilled Eggplant, Baked Beans and Stuffed Jalapeno
Day 24 – Leftovers
Day 25 – Beef Enchiladas, Homemade Rice, Homemade Refried Beans
Day 27 – Bunless Burgers, Grilled Eggplant, Grilled Bell Peppers, Onion Rings
Day 28 – Stuffed Bell Peppers with ground beef, guinoa, cheese, tomatoes and avocado

Week 3:

Day 15 – BBQ Meatloaf, Golden Mashed Potatoes, Herb Roasted Carrots
Day 16 – Stuffed Chicken with cheese, tomatoes and Thai Basil, Caprese Style Tomatoes
Day 17 – Leftovers
Day 18 – Spaghetti with meatsauce and sauteed zucchini
Day 19 – More leftovers!
Day 20 – Instant Pot Buttery Lemon Chicken, Quinoa, Sauteed Squash and Zucchini
Day 21 – Pizza (another weirdly long Friday work day but this time I got Simple Truth Organic frozen pizza from Kroger)

Week 2:

Day 8 – Tacos, Homemade Spanish Rice, Homemade Refried Beans
Day 9 – Baseball Game! We went to a Texas Rangers game for Father’s Day and we ate stadium food there
Day 10 – Leftovers
Day 11 – Breakfast for dinner! Paleo pancakes, farm fresh eggs and real maple syrup!
Day 12 – Baked Salmon, Honey Carrots, Baked Beans
Day 13 – Leftovers!
Day 14 – Stuffed Pepper with ground beef, quinoa, beans, cheese, tomatoes and avocado.

Week 1:

Day 1 – Steak, Parmesan Mushroom Rice and a fresh side salad
Day 2 – Leftovers
Day 3 – Bunless Burgers, Pickles, Caprese Style Tomatoes and a fresh side salad
Day 4 – Whole Baked Chicken (started in the InstantPot, finished in the oven), Sauteed Oyster Mushrooms and Sauteed Yellow Squash
Day 5 – Chicken Fajitas, Homemade Spanish Rice and Homemade Refried Beans
Day 6 – A simple saute of Chicken, Bell Peppers, and Oyster Mushrooms
Day 7 – Pizza! (After an abnormally long day at work, I grabbed Dominoes Pizza on the way home)
